Mediterranean Vegetable Salad
  • Preheat the oven to 180°C/gas 4.
  • Toss chunks of courgette, red pepper, aubergine and red onion into a roasting tray together with a little oil and season with salt and pepper.
  • Roast for 30 to 40 minutes, turning once or twice, until sweet and caramelized.
  • Remove from the oven & whilst still hot, mix through Sacla Classic Basil Pesto & add rocket. Scatter with Parmesan shavings.
