Gluten Free Banana, Chocolate & Almond Muffins (Jacqui Farrugia)
I have tried so many recipes for gluten free muffins.  Not that they did not turn out great but they always seemed to lack something ...

This time, I have added one secret ingredient to these muffins, maybe it was this ingredient that made these muffins sooo moist! Fabbri Chocolate Syrup! And they definitely do not taste gluten free! Ooooh, they were lovely with mint choc chip ice-cream!

 Ingredients (Makes 12)

4 ripe bananas, mashed
1/3 cup melted butter
3/4 cup soft brown sugar
2 eggs beaten
1 tsp Vanilla
1 tsp Cinnamon
1 tsp baking soda
Pinch of salt
1/2 Xanthan Gum
1 1/2 cups Gluten Free all purpose flour
1 tbsp Fabbri Chocolate Topping Sauce
3/4 cup chocolate chips
1/4 cup chopped almonds 


Method

Preheat oven to 120 Deg C.  In a large mixing bowl, mix the butter into the mashed bananas and add the cinnamon. Mix in the sugar, eggs and vanilla.  Sprinkle the baking soda and salt over the mixture and mix in gently.  Add the flour and xanthan gum and mix.  Add the tablespoon of chocolate syrup and combine.  Finally put in the chocolate chips and almonds and mix again.  Do leave some chocolate chips to put on the muffins before baking.

Pour into greased muffin pan and bake until a skewer when inserted, comes out clean.
